Preparation:

– 1 kg dried figs

– 100 gr. raisins

– 100 gr. honey

– 100 gr. sugar

– 100 gr. candied citron cubes

– 100 gr. hazelnuts

– 100 gr. walnut kernels

– 100 gr. dark chocolate

– 120 gr. whole wheat flour

– 100 gr. bread crumbs

– a pinch of nutmeg

– grated rind of one lemon

– grated rind of one orange

– one glass of extra virgin olive oil

– dry white wine

– oil and flour for the mould

– candied fruit to decorate

1) Soak the dried figs and raisins in abundant white wine for one night.

On the following day, stir sugar, flour, bread crumbs, honey, nutmeg, lemon and orange rind in a large bowl. Add roughly chopped walnuts and hazelnuts, figs previously cut into small pieces, raisins, chopped chocolate, candied citron and oil (at least a couple of tablespoons). Mix all the ingredients. If necessary, add a little wine left from figs to soften the dough. Preheat the oven to 160 ° C.

2) Grease a 26 cm diameter mould with oil and flour and pour the mixture.

Cook the cake in the preheated oven for about 40 minutes. Let the cake rest for about ten minutes, take it out from the mould and place it on a small gridiron. When it is cold, decorate it as you like with candied fruit.
